You really should let paper towels soak all the grease up. I thought it was good enough. But the fatter pieces on the bottom of the stack didn’t get its grease soaked up enough.

Some parts on the jerky is thin and definitely done. It might be fat that is the fatter part. Apparently that doesn’t get smaller.
